Hi guys! I haven’t posted anything for a long time and I found this blog post which I wrote ages ago and I think you guys will love it! A while ago I made a dozen cupcakes and they were delicious. They were vanilla cupcakes with vanilla buttercream topped with some cute sprinkles. This is an easy recipe which I hope you guys will enjoy. - 120g of softened butter
- 135g of caster sugar
- 1 egg
- 1 teaspoon of vanilla extract
- 120g of self-raising flour
Preheat the oven to 180C/350F/Gas4. Firstly if you have rock hard butter do not put it in the microwave to soften it. Instead you can leave it out to naturally soften or put your butter in a zip lock bag and roll it with a rolling pin to soften it. The first step to making your cupcake batter is, you want to cream the butter and sugar with either a wooden spoon or electric mixer until it is pale. Then you want to beat the egg in a separate bowl and then mix it in with the vanilla extract along with the butter and sugar. Finally fold in the self-raising flour. Spoon your mixture until your cupcake cases are half way full. Then you want to bake these cupcakes for 10-15 minutes or until they are golden brown and a skewer inserted into the cakes comes out clean. Set the cupcakes to cool before icing them.
For the buttercream icing you will need:
- 100g of softened butter
- 200g of icing sugar
- 1/2 teaspoon of vanilla extract
- 1-2 tablespoons of milk
For the buttercream beat the butter until it is smooth and then add half of the icing sugar and beat until smooth. Add the remaining icing sugar and vanilla essence and milk. Now you can spoon the buttercream into a piping bag with your desired nozzle. Pipe the cream in a swirl motion. Finally for the fun part you can add sprinkles. You can go crazy with the sprinkles.
